Perfect, with your rice and lentils already cooked, you’re halfway to a delicious meal. Let’s make that Spicy Tuna and Lentil Rice Bowl even quicker!

Ingredients:

•   From your pantry:
•   Cooked rice
•   Cooked lentils
•   Tuna in olive oil
•   Eggs
•   Garlic powder
•   Parsley powder
•   Chili flakes
•   Soy sauce
•   Sesame oil
•   Salt & pepper
•   Parmesan cheese (optional)
•   From the store:
•   Fresh spinach or any leafy greens (optional, but recommended)

Instructions:

1.  Heat the rice and lentils: Since they’re already cooked, just reheat them. You can use the microwave or warm them up in a pan with a splash of water or oil to keep them from sticking.
2.  Prepare the tuna: In a pan, heat a small amount of sesame oil over medium heat. Add a pinch of garlic powder and chili flakes, stirring for about 30 seconds to release their flavors. Then, toss in the tuna (with a bit of the olive oil for flavor) and break it up with a spatula. Add a splash of soy sauce for that umami punch. Heat until warm.
3.  Sauté the spinach (optional): If you’re using greens, quickly sauté them in the same pan once the tuna is done. They only need about a minute to wilt down.
4.  Fry an egg: In another pan, fry an egg to your preferred doneness. A runny yolk is always a good choice for adding richness.
5.  Assemble the bowl: Start with a base of your warmed rice, add a scoop of lentils, the sautéed spinach (if using), and the spicy tuna. Top it all with the fried egg.
6.  Garnish and serve: Sprinkle some parsley powder, a few extra chili flakes if you want more spice, and a bit of parmesan cheese for a salty finish.
